In the beginning of the 60’s, the International Coffee Organization (ICO) established an identity code for each exporting country that, followed by the exporters code and the loading/shipping number, is stamped since then in each bag of coffee. As a small tribute to the history of the bag of coffee, Cafés El Magnífico wants to contribute perpetuating this traditional numeration.

THE FARM
As an origen, Peru has all the necessary conditions to produce world-class coffee: concentrated volumes of coffee at and above 1.700 meters above sea level, prominence of Typica, Bourbon and Caturra, and a movement among the producing population, far from subsistence farming and towards quality coffee production as a viable business.

As Peru is relatively new to the specialty coffee world, there are still some challenges directly related to this issue. The Peruvian coffee structure is not as strong as other big producers. In addition, the distance between the farms and the delivery points of parchment coffee in general is very important and coffee growers opt to wait for a full load before driving their coffee to the city, which may adversely affect quality.

The infrastructure on the farms also needs attention. Most farmers dry their coffees with tarps laid on the ground. As the incentives for coffee production with high cup scores increase, we expect to see these challenges disappear quickly as Peru moves into the world of specialty coffees.

Although these challenges demand clear and direct solutions, this has not prevented Peru from producing extraordinary coffees this year. The producers' lots are sorted and classified according to their quality. This Huabal is a clear example of an outstanding coffee.

PROCESS
The coffees of this selection are washed, separated by density, after which they are pulped and the mucilage removed by fermentation in water tanks. This process lasts from 24 to 36 hours depending on weather conditions.

The coffee parchment is carefully dried and once cured are tasted and mixed among the best in the region.

CUPPING NOTES
Fruity, blackberry, watermelon and fragrance. Chocolate and fruity flavors with a hint of wine. Good body and very well balanced.
